In a significant change for RKK Bremen, the kitchen has welcomed a new manager - 34-year-old Philip Kalthoff. A native of Bremen, Philip has climbed the career ladder at RKK Bremen, taking over from Michael Winne who retires after 48 years in the workforce.
Philip's tenure has brought a fresh perspective to the kitchen, with a focus on innovation and respect for traditional culinary techniques. The kitchen team, approximately 60 members strong, have embraced this change, working together to revamp the menu, streamline operations, and emphasise sustainability.
The menu now features fresh, seasonal ingredients with creative flair, while maintaining popular classics. Efficient workflows have been implemented to enhance productivity without compromising quality. Sourcing local produce and reducing food waste are key aspects of their eco-friendly practices.
Philip fosters a collaborative environment, where chefs and kitchen staff are encouraged to experiment and contribute ideas. Modern kitchen technology has been integrated to improve precision and consistency in cooking.
Under Philip's management, the RKK kitchen continues to maintain its excellent reputation, serving approximately 900 meals daily to patients, hospital staff, Café K guests, and residents of the Bremen Sisters retirement home.
Philip assures regular Café K guests that the "SchniPo day" (Schnitzel and fries every Wednesday) is not at risk. He describes the RKK kitchen as modern, fresh, varied, and sustainable.
Philip is pursuing a culinary master's degree and expects to complete it in 2026. He plans to make changes to the kitchen, but not hasty ones. The RKK kitchen, known for its excellent reputation, will continue to serve delicious meals to its patrons.
